Black Bean Salad - from Family Christmas OnlineTM

Add some festive variety to any picnic or holiday table.

For this recipe you'll need:


    1/2 cup sugar
    1 tsp celery seed
    1/2 tsp salt
    1/4 tsp pepper
    1/2 cup vinegar
    1/4 cup vegetable oil
    1/2 onion, chopped (1/4-1/2 cup)
    1 red bell pepper, chopped
    2 cans black beans

Mix the sugar, celery seed, salt, pepper, and vinegar thoroughly. Here's what our onion and bell pepper look like chopped up. Yours doesn't have to look like this; I just had this photo on hand and thought I'd put it in in case it helped. Click if you need to see it larger.

Add the vegetable oil and stir briefly.

Add the chopped onion and bell pepper.

Drain the beans, and gently stir them in (if you stir too vigorously, you'll break them up).

Variations

Some versions of this recipe call for three cans of beans, for other kinds of canned beans, or for mixing different kinds of canned beans beans. The pepper is optional; we add it mostly for flavor. But if you would like to have red and green, and if you like the flavor of green bell pepper, there's no reason you couldn't add a little of that, too. Also, if red bell pepper is unavailable and you want the color, you could add canned "pimentos."
